Perfect Cherry Pie

The Perfect Cherry Pie – an old fashioned recipe using an all butter crust and plenty of sweet cherries in the filling.

For the Butter Pastry

1 cup very cold butter cut in small cubes
2 ½ cups flour
2 tbsp brown sugar
½ tsp salt
1/2 to 2/3 cup ice water, Only enough to make a dough form.
1 tsp vanilla extract

For the Cherry Filling

3 pounds of sweet cherries, pitted
3/4 cup brown sugar, lightly packed
1 tsp vanilla extract
3 tbsp freshly squeezed lemon juice
pinch salt
3 rounded tablespoons corn starch

For the egg wash

1 beaten egg yolk
1 to 2 tbsp water
