This No Bake Strawberry Cheesecake is great for any occasion. It is light, fluffy, and full of fresh strawberry and lime flavor. A golden Oreo crust adds the perfect touch to the strawberry mousse cake.
INGREDIENTS
FOR THE CRUST
- 30 golden Oreos
- 6 tablespoons unsalted butter, melted
FOR THE FILLING
- 2 – 8 ounce packages cream cheese, softened
- ½ cup granulated sugar
- 1 cup plain Greek yogurt
- 2 teaspoons rum extract
- ⅔ cup frozen nonalcoholic strawberry daiquiri mix, thawed
- 2 packets unflavored gelatin
- 1 cup diced fresh strawberries
- 1 – 8 ounce container Cool Whip, thawed
- 2 tablespoons lime zest (from 2-4 limes)
- red gel food coloring, optional
