ELOTE CORN RECIPE (MEXICAN STREET CORN)

Elote is a traditional street food in Mexico. In America, it is typically called Mexican street corn. It is corn on the cob charred on an open grill and smothered in cheese, a cream sauce, and chipotle seasoning.

INGREDIENTS

  • 6 ears corn husked and all silk removed
  • olive oil
  • 2 tsp chipotle chili powder
  • ¼ – ⅓ cup cotija cheese crumbled
  • ¼ cup fresh parsley finely chopped
  • sea salt
  • 2 limes juiced

MEXICAN CREAM SAUCE (CREMA):

  • 1 cup heavy cream
  • 2 tbsp sour cream
  • 1 lime juiced
  • ¼ tsp chipotle chili powder
  • ¼ tsp salt
