CHOCOLATE {AND MARSHMALLOW} CAKE IN 18 LAYERS!

 

 

For the masses:

280g finely chopped 70% cocoa chocolate;
1 and 1/3 cup [170g] cake flour [cake flour – measure the amount called for in wheat flour, then discard 2 tablespoons and add 2 tablespoons of cornstarch to compensate];
1 teaspoon of baking soda;
1 teaspoon of baking powder;
2/3 cup [60g] cocoa powder;


12 yolks;
1/2 cup plus 4 tablespoons [140g] corn or canola oil;
2/3 cup [200g] whole milk at room temperature;
1 and 1/2 teaspoons of vanilla extract;
12 egg whites;
1 teaspoon of cream of tartar [can be replaced with 2 teaspoons of lemon juice];
1 cup [180g] of refined sugar.

For the chocolate mousse filling:

240g finely chopped 70% cocoa chocolate;
2 egg yolks [prefer pasteurized yolks, to be safe] lightly beaten;
1/3 cup [60g] of refined sugar;
