Twice Baked Potatoes

Preheat the oven to 400Β°F (200Β°C). Scrub the potatoes and pierce them with a fork several times.
Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender.
Remove the potatoes from the oven and let them cool slightly. Slice off the top third of each potato lengthwise and scoop out the flesh into a large bowl, leaving a thin shell.
Mash the potato flesh with a fork or potato masher. Add half of the shredded cheddar cheese, half of the crumbled bacon, sour cream, melted butter, green onions, salt, and pepper. Mix until well combined.
Spoon the mixture back into the potato shells, mounding it slightly. Top with the remaining shredded cheddar cheese and crumbled bacon.
Place the potatoes on a baking sheet and return them to the oven. Bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
Serve hot and enjoy!
