Spicy Energy Balls with Dates and Nuts

250g pitted dates (about 1 1/2 cups)
Pinch of cinnamon
Pinch of ground cardamom
1 tablespoon cocoa powder (optional for a chocolatey taste)
1 teaspoon vanilla extract (optional)
Pinch of sea salt (optional, to balance the sweetness)
Instructions:
Preparing the Ingredients
If the dates are not already pitted, remove the pits. If they are dry, soak them in warm water for 10 minutes to soften them.
Toasting the nuts
Lightly toast the peanuts, almonds, pistachios, and hazelnuts in a dry skillet over medium heat for about 3 to 5 minutes, stirring constantly to prevent them from burning. This will enhance their flavor and give them a delicious crunch.
Mix the ingredients
In a food processor, add the toasted walnuts, pitted dates, cinnamon, cardamom, and (if desired) the cocoa powder and vanilla extract. Pulse until the mixture is smooth and sticky. If the mixture is too dry, add a few more dates or a teaspoon of water. If you like a crunchier texture, pulse for less time.
