Snickerdoodle Zucchini Bread

1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
2. In a large bowl, combine the zucchini, sugar, butter, egg, vanilla, and cinnamon. Mix until well combined.
3. In a separate bowl, whisk together the flour, baking soda, and salt. Add the dry ingredients to the wet ingredients and mix until just combined. Stir in the sour cream.
4. Pour the batter into the prepared loaf pan.
5. In a small bowl, combine the topping ingredients. Sprinkle the streusel topping evenly over the batter.
6. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
7. Let the bread cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
8. Serve and enjoy!
