Smothered Chicken with Creamed Spinach, Bacon, and Mushrooms

1. Prepare the Chicken:
Season the chicken breasts with garlic powder, onion powder, salt, and pepper on both sides.
2. Cook the Bacon:
In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the bacon fat in the skillet.
3. Cook the Chicken:
In the same skillet, add the olive oil and heat over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes on each side, or until fully cooked and golden brown. Remove the chicken from the skillet and set aside.
4. Sauté the Vegetables:
In the same skillet, add the sliced mushrooms and cook for about 5 minutes, or until they are soft and slightly browned. Add the minced garlic and cook for an additional 1-2 minutes.
5. Add the Spinach:
Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
6. Make the Cream Sauce:
Pour in the heavy cream and stir in the grated Parmesan cheese and Italian seasoning. Cook for about 2-3 minutes, or until the sauce has thickened slightly.
7. Combine Everything:
Add the cooked bacon and chicken breasts back to the skillet, spooning the creamy spinach and mushroom mixture over the chicken. Cook for an additional 2-3 minutes, until everything is heated through and well combined.
8. Serve:
Serve hot, garnished with additional Parmesan cheese and fresh herbs if desired.
