S’mores Ice Cream Sandwich

Spread a tablespoon of the frosting over 12 of the graham crackers and marshmallow crème on the other 12.
Cut the cardboard off the ice cream using scissors.
Cut the ice cream into thirds lengthwise.
Cut each third into 2 squares, trimming them down a little if needed.
Put an ice cream square on each of the graham crackers spread with frosting.
Put the marshmallow crème squares on top with the marshmallow facing the ice cream.
Freeze for 4 hours or until set.
Serve right away or wrap each ice cream sandwich in foil and keep them frozen.
Notes
Variations and Substitutions:

You can use any kind of ice cream you prefer, perhaps vanilla or chocolate. Or you could go with rocky road, mint choc chip or anything you like really. Sub cinnamon or chocolate graham crackers if you like.
