Clean and pat dry the chicken breast fillets. Slice each chicken breast horizontally to create a pocket for the filling.
Marinate the chicken breasts with the prepared marinade, ensuring they are well-coated. Let them marinate for at least 30 minutes to absorb the flavors.
2. Prepare the Mushroom and Tomato Filling:
While the chicken is marinating, clean and slice the mushrooms. Dice the tomatoes and chop the onion.

In a frying pan, heat a small amount of oil over medium heat. Sauté the chopped onion until it becomes translucent.
Add the sliced mushrooms to the pan and cook for about 5 minutes until they release their juices and begin to brown.
Add the diced tomatoes and cook for another 3-4 minutes until they soften. Season the mixture with a pinch of salt and pepper.

Stir in the sour cream and flour, mixing well until the sauce thickens slightly. Remove from heat and let it cool.
3. Stuff the Chicken Breasts:
Preheat your oven to 180°C (350°F).
Take each marinated chicken breast and carefully stuff it with the mushroom and tomato filling. Secure the edges with toothpicks if necessary to prevent the filling from spilling out during cooking.

5. Garnish and Serve:
Garnish the chicken with freshly chopped parsley for a burst of color and flavor. Serve hot with your favorite sides like rice, mashed potatoes, or a fresh salad.
Cooking Tips
Don’t Overstuff the Chicken: Ensure that the chicken breasts are not overly stuffed to prevent the filling from leaking out while baking.
Adjust the Marinade: Feel free to adjust the marinade ingredients to your taste. You can add herbs like thyme or rosemary for an extra flavor boost.
Check for Doneness: Make sure the chicken is cooked through by checking that the internal temperature reaches 75°C (165°F).
