Savory Pickled Eggs & Sausage

1. Boil the eggs: Bring a large pot of water to a rolling boil. Gently lower the eggs into the water and boil for 10 minutes.
2. Peel and place in jars: Remove the eggs from the boiling water and immediately plunge them into a bowl of ice water to stop the cooking process. Once cooled, peel the eggs and place them in clean jars.
3. Make the brine: Combine the cider vinegar, white vinegar, water, pickling salt, onion, garlic, sugar, turmeric, celery seeds, mustard seeds, and bay leaf in a large saucepan. Bring to a boil, then reduce heat and simmer for 5 minutes.
4. Pour over eggs: Pour the hot brine over the eggs in the jars, filling them to the top. Seal the jars tightly.
5. Chill for 2 hours: Allow the pickled eggs to rest at room temperature for at least 2 hours before refrigerating.
6. Brown the sausage: In a skillet, heat the olive oil over medium heat. Add the sausage and cook until evenly browned.
7. Serve and enjoy: Top the pickled eggs with the browned sausage and savor this delicious combination!
