Potato and Spinach Egg Bake

Ingredients
450 grams (1 lb) potatoes, peeled and cubed
1 onion, finely chopped

250 grams (about 9 oz) spinach, washed and chopped
4 eggs
4 tbsp cream cheese
Salt to taste
Granulated garlic to taste
1 teaspoon baking powder
150 grams (5 oz) pizza mozzarella, shredded
Vegetable oil for cooking
Directions
Preheat your oven to 180°C (350°F).
In a large pot, bring water to a boil and cook the cubed potatoes until tender, about 10-15 minutes. Drain and set aside.
In a large skillet, heat a drizzle of vegetable oil over medium heat. Add the finely chopped onion and sauté until translucent.
Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat.
