Pecan Streusel Coffee Cake

I. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
II. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and sour cream.
III. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
IV. Pour half of the batter into the prepared baking pan, spreading it evenly.
V. In a small bowl, combine the chopped pecans, brown sugar, ground cinnamon, and melted butter to make the streusel topping.
VI. Sprinkle half of the streusel mixture over the batter in the pan. Pour the remaining batter over the streusel layer, then top with the remaining streusel mixture.
VII. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool slightly before slicing and serving.
