ORANGE ZUCCHINI BREAD

Preheat oven to 350. Spray 2 9×5 inch loaf pans with non stick spray. Set aside.
In a large bowl, add the sugar to the beaten eggs, whisk to combine. Stir in vegetable oil and vanilla. To the center or the bowl, add the flour, baking soda, baking powder, salt, cinnamon, orange zest and nutmeg. Stir to slightly combine, then add zucchini, raisins and nuts. Stir to completely combine. Divide batter between the 2 loaf pans. Bake for 1 hour, or until a toothpick inserted into the middle comes out clean. Cool till warm and add icing, if desired.
LETS MAKE THE ICING- Add orange juice to a bowl and add powdered sugar a 1/2 cup at a time till you reach a desired consistency.
BAKING OPTIONS-
Mini loaf pans- bake 25-30 minutes
Bundt cake pan- bake 1 hour
Muffin tins- 30 minutes
