Oklahoma Nut Candy

 

Prepare Baking Sheet: Line a baking sheet with parchment paper and set aside.
Cook Candy Base: In a medium saucepan, combine the granulated sugar, light corn syrup, evaporated milk, and unsalted butter. Cook over medium heat, stirring constantly, until the mixture reaches 240°F on a candy thermometer (soft-ball stage).
Add Vanilla: Remove the saucepan from heat and stir in the vanilla extract.
Mix Nuts: Quickly add the mixed nuts and chopped peanuts (if using) to the saucepan. Stir until the nuts are evenly coated with the candy mixture.
Spread Candy: Pour the mixture onto the prepared baking sheet and spread it out evenly with a wooden spoon or spatula.
Cool and Set: Allow the candy to cool completely at room temperature until it is firm and set.
Break into Pieces: Once cooled, break the candy into bite-sized pieces and store in an airtight container.
