Nourishing Nut and Fruit Delight Balls

 

Fry the pumpkin seeds in a frying pan until golden brown.
Roast the pine nuts and peanuts in a separate pan until fragrant.
Soak the dates, dried apricots, and raisins in water for 15 minutes, then drain.
Remove the center of the dates and chop them along with the apricots.
Grate the fresh ginger root.

In a large bowl, mix the roasted nuts, dried fruits, orange zest, ginger, sesame seeds, and dried raspberries.
Melt the sugar-free dark chocolate and add it to the mixture.
Form the mixture into balls and place them on paper shapes.
Refrigerate for 1-2 hours until firm.
