No Bake Preacher Cookies

 

  1. Begin by pouring the oats into a large bowl and setting them aside. Prepare a baking sheet by lining it with parchment paper. If you don’t have a baking sheet handy, any flat surface, such as a countertop, covered with parchment paper will work just as well.
  2. In a medium saucepan, melt 1 stick of butter over medium-high heat. Be sure to stir frequently to ensure the butter melts evenly. Once the butter is fully melted, bring the mixture to a boil and let it boil for 1 minute, then promptly remove it from the heat.
  3. Add the peanut butter and vanilla extract to the saucepan. Stir the mixture until the peanut butter is completely melted and everything is well combined.
  4. Pour the peanut butter mixture over the oats that you set aside earlier. Add the milk and sugar to the bowl and stir everything together until the ingredients are fully incorporated.
  5. Using a tablespoon, scoop the batter and drop it onto the prepared baking sheet. Gently press down on each scoop to flatten it into a cookie shape.
  6. In a microwave-safe dish, combine the chocolate chips with 1 tablespoon of unsalted butter. Microwave the mixture in 20-second intervals on medium heat, making sure to stir after each interval. Continue this process until the chocolate is completely melted and smooth.
  7. Use a spoon to drizzle the melted chocolate over the top of each cookie. The cookies are ready to be enjoyed once the chocolate has cooled and set. For a firmer texture, you can chill the cookies in the refrigerator for 1 hour.
  8. Once the cookies are set, transfer them to a serving platter or store them in an airtight container for later enjoyment.
