No-Bake Banana Bliss

2 teaspoons instant coffee
50 ml water

White chocolate, grated

In a saucepan, melt the butter over low heat. Add the cocoa powder and stir until well combined.
Peel and mash the bananas; add to the saucepan and cook until soft.
In a separate bowl, whisk the egg yolk with milk and cornstarch until smooth. Gradually pour this mixture into the saucepan with the bananas, stirring constantly until the mixture thickens. Remove from heat and allow to cool.

Whip the cream to stiff peaks. Gently fold the whipped cream and melted chocolate into the cooled banana mixture.
If using, mix the crushed biscuits with melted butter and press into the bottom of serving glasses for a crust. Pour the banana mixture over the crust.
Refrigerate for at least 20 minutes or until set. Garnish with grated white chocolate before serving.
