Mississippi Mud Potatoes

  1. Preheat your oven to 325°F (165°C).
  2. In a 9×13 baking pan, combine the diced potatoes, shredded cheddar cheese, crumbled bacon, minced garlic, and chopped onion.
  3. Add the mayonnaise to the mixture and stir until all ingredients are evenly coated.
  4. Place the pan in the preheated oven and bake for about 1 1/2 hours, or until the potatoes are tender and cooked through.
  5. Once done, remove from the oven, let it cool slightly, and serve hot.
