Lazy Kefir Pies

 

In a large mixing bowl, whisk together kefir, salt, sugar, and the egg until well combined.
Gradually add the flour and baking powder, mixing continuously until the batter is smooth.

Stir in 20 ml of vegetable oil until fully incorporated.
Heat the remaining vegetable oil in a skillet over medium heat.
Pour a ladleful of batter into the hot skillet and spread it slightly to form a circle.

Top the batter with chopped boiled eggs, green onions, and grated cheese.
Cover with a lid and let it cook for 2-3 minutes, until the bottom is golden brown.
Carefully flip the pie and cook for an additional 2-3 minutes, ensuring it is cooked through.

Serve hot and enjoy these lush, soft pies!
