Jamaican Pineapple Upside-Down Cake
Just turned the world upside down with this Jamaican Pineapple Upside-Down Cake! Sweet, caramelized pineapple with a soft, moist base. Heaven on a plate! 
Ingredients:
1/2 cup butter, melted
1 cup brown sugar
1 whole pineapple, peeled, cored, and sliced into rings
10 maraschino cherries
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup granulated sugar
2 large eggs
1/2 teaspoon vanilla extract
1/2 cup pineapple juice (from the canned pineapple if not using fresh)
