Directions:

Prepare Potatoes: Peel and grate the potatoes. Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible.
Season: In a bowl, mix the dried grated potatoes with salt, dried garlic, chopped parsley, and finely chopped hot peppers.

Form Cheese Balls: Cut the mozzarella cheese into small cubes. Take a small amount of the potato mixture and flatten it in your hand. Place a cube of cheese in the center and wrap the potato mixture around it, forming a ball. Ensure the cheese is completely enclosed.
Coat in Starch: Roll each potato ball in potato starch to coat evenly. This will help create a crispy exterior when fried.
Fry: Heat sunflower oil in a deep frying pan or pot. Once the oil is hot, carefully add the potato balls and fry until golden brown and crispy on all sides.
