Preheat the oven to 200°C (400°F).
Wash the potatoes and pat them dry. Cut them in half or quarters, depending on their size.
Place the potatoes in a large bowl. Drizzle with olive oil and sprinkle with smoked paprika and salt. Toss to coat evenly.
Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
