Coconut Alfajores

1. Mix: In a bowl, combine the grated coconut with the sugar. Add the egg whites and vanilla, mix well. Add the cornstarch.
2. Form the discs: Make small balls with the dough and flatten them to form discs.
3. Bake: Place the discs on a tray and bake at 180°C (350°F) for 15-20 min, until golden.
4. Cool: Let the discs cool completely.
5. Assemble the alfajores: Spread dulce de leche on one disk and cover with another. Roll the edges in extra shredded coconut.
