Classic Niçoise Ratatouille

Here is a classic recipe for Ratatouille Niçoise:
Ingredients :
2 large eggplants
3 zucchinis
2 red peppers
2 green peppers
4 very ripe tomatoes
2 onions
4 cloves of garlic
Olive oil
Herbs of Provence (thyme, rosemary, basil)
Salt and pepper
Instructions :
Preheat your oven to 200°C.
Cut the eggplant, zucchini, peppers and tomatoes into medium-sized cubes.
Slice the onions and chop the garlic.
