Chocolate-Covered Coconut Bars

Using your hands, form the mixture into small rectangular bars. Place the bars on a baking sheet lined with parchment paper.
Freeze the bars for at least 30 minutes, or until firm.
Prepare the Chocolate Coating:
In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until the chocolate is completely melted and smooth.
Alternatively, melt the chocolate and coconut oil in a heatproof bowl set over a pot of simmering water (double boiler method), stirring until smooth.
Coat the Coconut Bars:
Using a fork, dip each frozen coconut bar into the melted chocolate, ensuring it is completely coated. Allow any excess chocolate to drip off.
Place the chocolate-covered bars back onto the parchment-lined baking sheet.
Set the Chocolate:
Refrigerate the bars for about 20 minutes, or until the chocolate is set.

Serve:

Once the chocolate is set, the bars are ready to be served. Store any leftovers in an airtight container in the refrigerator.

These homemade chocolate-covered coconut bars are a delightful treat, perfect for satisfying your sweet tooth. Enjoy!
