Cauliflower Cheese Patties

These Cauliflower Cheese Patties are a delightful and nutritious option for any meal. Made with fresh cauliflower, eggs, cheese, and a hint of scallion, these patties are crispy on the outside and tender on the inside. Perfect as a snack, side dish, or even a light main course, they are sure to be a hit with the whole family.

Preparation Time: Approximately 30 minutes

Ingredients:

1 small cauliflower
2 medium eggs
100g mozzarella, Gouda, or cheddar cheese, grated (3½ ounces)
1 scallion, green and white parts thinly sliced
3 to 4 tablespoons oatmeal
Sea salt, to taste
Extra-virgin olive oil, for shallow-frying

Directions:

Cut the cauliflower into medium-size florets. Place in a microwave-safe bowl with ½ cup water, cover, and microwave until tender, 8 to 9 minutes. Alternatively, you can boil or steam the florets until tender.
Drain off the water, then mash the cauliflower using a fork until smooth.
In a large bowl, combine the mashed cauliflower with 2 medium eggs, 100g grated cheese, thinly sliced scallion, 3 to 4 tablespoons oatmeal, and sea salt to taste. Stir until well combined.
Heat extra-virgin olive oil in a wide nonstick pan over medium-high heat.
Using wet hands to prevent the mixture from sticking, take about a heaped tablespoon of the mixture and shape it into a ½-inch-thick round patty.
Place 5 or 6 patties in the pan and fry until golden brown, about 3 minutes per side.
Use a slotted spoon to transfer the patties to a paper towel–lined plate to drain excess oil. Continue shaping and frying patties from the remaining mixture.
Serve the patties immediately, either on their own or with a dipping sauce of your choice.
Serving Suggestions: Serve these patties warm with a side salad, as an appetizer with a dipping sauce like tzatziki or marinara, or as a side dish to complement your main course.
