Blueberry Upside Down Cake

This blueberry upside down cake is a summer treat – an easy cake covered in caramelized blueberries

Ingredients

1/3 cup brown sugar
2 Tablespoon butter
1 1/2 cup blueberries
2 eggs separated into whites and yolks
3/4 cup sugar
1/2 cup butter
1 teaspoon vanilla
1 1/2 cup flour
2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup milk

Instructions

Preheat oven to 350.
To make the topping heat the brown sugar and 2 T. of butter in a small saucepan. Cook until the butter melts and sugar dissolves.
