Baked Pork Chops with Roasted Potatoes

Preheat the Oven:
Preheat your oven to 400°F (200°C).
Grease a large baking dish or sheet pan with a light coating of olive oil or non-stick spray.
Season the Pork Chops:
In a small bowl, combine the dried thyme, rosemary, smoked paprika, garlic powder, onion powder, salt, and black pepper.
Rub the pork chops on both sides with 1 tablespoon of olive oil, then evenly sprinkle the seasoning mixture over both sides of the pork chops, pressing it into the meat.
Prepare the Potatoes:
In a large bowl, toss the halved or quartered potatoes with the remaining olive oil, minced garlic, salt, pepper, and a sprinkle of the remaining seasoning mixture.
Arrange the potatoes in the baking dish or sheet pan in a single layer, cut side down for maximum crispiness.
Bake the Dish:
Place the seasoned pork chops on top of the potatoes in the baking dish, ensuring they don’t overlap.
Bake in the preheated oven for 25-30 minutes, or until the pork chops are cooked through (internal temperature of 145°F or 63°C) and the potatoes are tender and golden brown.
If desired, turn on the broiler for the last 3-5 minutes to achieve a crispier finish on the pork chops and potatoes.
Garnish and Serve:
Remove the baking dish from the oven and let the pork chops rest for 5 minutes before serving.
Garnish with freshly chopped parsley and serve hot, accompanied by your favorite side dishes or a simple green salad.
