Baked Oatmeal Chocolate Chip Breakfast Cups

Preheat the oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners.
In a large bowl, mix together the oats, baking powder, salt, cinnamon, and brown sugar.
In another bowl, whisk together the milk, egg, vanilla extract, and applesauce.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Fold in the chocolate chips.
Divide the mixture evenly among the prepared muffin cups, filling each about three-quarters full.
Bake for 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
Let cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
