Apple Pie Cookies

These apple pie “cookies” are delicious and loaded with all the classic flavors of homemade apple pie in a easy hand-held treat, and they are super easy to make.

INGREDIENTS

2 Granny Smith apples, peeled, and diced into small pieces
¾ cup water
⅓ cup granulated sugar
2 tablespoon cornstarch
1 ½ teaspoon lemon juice
1 teaspoon ground cinnamon
1 box Pillsbury™ refrigerated pie crust
1 large egg
1 tablespoon water
2 tablespoons coarse sugar, optional

INSTRUCTIONS

In a medium saucepan over low heat, bring water, cornstarch, sugar, cinnamon, and lemon juice to a boil, stirring constantly.
Continue stirring for 3-4 minutes until the sauce thickens up.
Add apple pieces to the saucepan, stir and let simmer for 8-10 minutes.
